EASY HEALTHY PEANUT BUTTER BALLS

My sister made these when she was over for a play date with our kids. They all loved them.... especially the two year olds!

PEANUT BUTTER BALLS
1 cup Oats
1 cup Dry milk
1/2 cup Honey
1/2 cup Peant Butter

You can add anything else you want like, dried fruit, nuts, coconut, etc....

Just mix all ingredients together. Add more honey/peanut butter as needed. I had to add more peanut butter to get them to stick together since I used Adam's peanut butter and it is a little bit dryer.

HCG Recipe 1

So here is my first HCG Recipe I made the whole family eat. They actually loved it and I even heard my mom say "I could do this diet", when she has not been so thrilled about it. Here is it:

French Dip w/Au Jus and Onion Rings -long but super easy
(HCG version and family serving of course 4-5)

2 Large Steaks thinly sliced
4 cups beef broth
2 tsp thyme
2 tsp pepper( I didn't use this much though)
2 onions
4 cloves of garlic (minced)

Onions Rings:
2 onions
mini toast (I bought little packs at world market, could use melba toast or grissinni breadsticks) enough for 50 calories per person -
1 tsp cayenne
1 tsp pepper
1 tsp salt
4 tblsp milk

Put toast in Ziplock bag and crush with rolling pin until it is powder
Put crushed toast on plate
Mix, milk, cayenne pepper, pepper, and salt in another ziplock bag.
Cut onions in circles and put in bag with milk and peppers, and salt
Make sure the onions get coated well, leave in bag 3 minutes
Toss and leave for another 3 minutes
Place onions on plate in toast crumbs and coat well.
Put on cookie sheet lined with foil.
Put in oven for 6 minutes
Turn over and bake another 6 minutes

Saute other 2 Onions and garlic in 1/4 cup water for about 5-10 minutes
Add broth, thyme and pepper to onions and garlic, bring to a boil
Turn down heat and simmer 5-10 moniutes
Add steak and simmer another 10 moniutes until steak is cooked.

When both are cooked, serve and enjoy. I put out rolls, cheese and other condiments for the other family members to make french dip sandwhiches with.
You can also put a couple splahes of liquid aminos on steak (this is the healthy version of soy sauce, I am suprised how it taste exactly like soy sauce but without the sugar and starch.)

New Goal!

So one of the things I have been wanting to do forever is learn to cook, bake and basically make better food! So here is my attempt. I am going to post at least once a week with the recipes I am going to attempt. A few ideas I am going to start with: monthly birthday cake for the birthday celebration dinner our family has. I am currently on the HCG diet, so one night a week I am going to post/try a new HCG recipe. I know it sounds crazy to cook new recipes I can't even try but since I can't eat it, the next best thing for me... cook it for everyone else to enjoy! I miss cooking! I am currently living with my parents for one more month while our house gets finished. I cook 2-3 nights a week and try new recipes all the time. Sometimes they are very simple, afterall I do have a two year old (almost). Here is my first recipe that I cooked for dinner last week. This recipe came from my parent's ward cookbook. It was a big hit:

Chicken in Lemon Cream Sauce:
1 Lb. Sliced Mushrooms
6 Chicken Breast
1 Medium Chopped Onion
4 Tbsp. butter
1 C. Cream
Juice from one lemon
Frozen Peas ( I did not use these)
Rice
Parsley

Saute onions and mushrooms in 1-2 tablespoons butter. Remove from pan, set aside. Put chicken in pan. Add 2-3 tablespoons butter and brown chicken. Pour cream and lemon juice on cooked chicken. Simmer. Add mushrooms, onions, and peas (optional). Simmer till warmed all through. Serve over rice. I added parsley to the rice in the rice cooker. You also can use chicken broth instead of water for the rice.

Everyone else said it was really good, although I didn't try it:)
